The 56-year-old Newstead resident vigorously denies the theft from Australia post during 2011 and 2012.
This morning the court heard from a former of employee of the defendant who owns a Newnham pharmacy which was an Australia Post outlet.
The employee said on one occasion Mrs Fisher arrived at the business with $16,000 in $100 bundles that were deposited in a safe just prior a prearranged Australia Post audit.
The woman said she routinely found IOU notes in Mrs Fisher's handwriting inside the safe for various amounts of money.
Defence lawyer Evan Hughes said his client was of exemplary character, had a sound financial position and the evidence was incapable of proving the three counts of theft.
The hearing continues.
