The Western Tiers Proteins' employee was hurt when a fat burner at Tasmanian Quality Meats exploded about 5.30pm on Friday.
The explosion of the pressure cooker was so powerful it knocked down the room's walls and roof.
"Machines are easy to replace, but people's welfare is critical, it's paramount to everything else," Craig Palmer, managing director of Western Tiers Proteins, said yesterday.
The company rents the factory space from Tasmanian Quality Meats and uses the slaughterhouse's waste to make products used in soap and animal feed.
The 59-year-old was taken to the Launceston General Hospital before being transported to the Royal Hobart Hospital.
Investigators are still examining the accident.
