Asador Mekonem Hinsta, 24, appeared in the Launceston Magistrates Court yesterday.
Mr Hinsta is accused of biting a police officer on Wednesday in Launceston and possessing methamphetamine along with a stolen diamond.
Magistrate Simon Brown said the defendant had been charged with assaulting an officer after he allegedly tried to punch the sergeant before biting his arm in Pleasant Street, Launceston.
Police also allege Mr Hinsta had a knife and a machete in the vehicle.
They claim he had a so-called pen gun, which could shoot .22 calibre bullets.
Mr Hinsta was also charged with not wearing a seat belt.
He asked Mr Brown for an adjournment to seek legal advice.
The defendant did not enter a plea and was remanded in custody to appear in court on Monday.
